WHELK & MANGO SALAD

WHELKS

Whelks are marine snails, like conch for which they make a good substitute. Fully Cooked Whelk meat makes it easy to prepare delicious treats like Whelk Fritters and this delicious salad.

   INGREDIENTS

1 pound Whelks or Conch, defrosted, washed and sliced or cubed
1 mango, sliced or cubed
1 small red bell pepper, seeded and chopped
1 shallot, finely chopped
1 clove garlic (1 tsp), finely chopped
bunch of cilantro, chopped
1 tablespoon fish sauce
1 teaspoon brown sugar
Juice of 1 large lemon or lime
1 grapefruit, peeled and segmented
1 Iceburg or butter lettuce, separated into single leaves 

DIRECTIONS

  • Combine fish sauce, lime juice, garlic, shallots and brown sugar in a glass bowl and mix well till combined.
  • Add the rest of the ingredients except the cilantro and combine, taking care not to break up the mango.
  • Refrigerate for an hour.
  • Add the cilantro, stir to combine and serve in the lettuce leaves.
