12oz (350g) Okra, cut into 1 inch lengths, discard top
1 Tbsp Curry Powder
2 Tbsp Shrimp Paste
1 Tbsp Cilantro chopped
1 Tbsp Lemon Juice
6 Oz. Prepared Saltfish
Green Onions for garnish
Sliced Bird Pepper to taste
Prepare the Saltfish by soaking it for 12 hours, changing the water three times. Rinse the fish and add to a pot of water and bring it to a boil. Turn off the heat and allow to cool, remove the fish and set aside.
Season the shrimp with your favorite seasoning mix and set aside to marinate in a cool place for at least an hour.
Heat the butter and Olive oil in a large pan or wok over medium heat.
Add the shallots and garlic and stir-fry for about 5 minutes.
Add the okra, curry powder and shrimp paste, stir well and cook for about 10 minutes, until the okra is tender.
Add 2 Tbsp of water, the cilantro, lemon juice, prawns and the saltfish and cook on low for 5 to 10 minutes, or until the shrimp are done. Taste and adjust the seasonings to suit your taste.
