CHERYL'S BANANA FRITTERS

CHERYL'S INCREDIBLE BANANA FRITTERS

INGREDIENTS

BATTER
2 cups mashed Bananas

(about 6 medium, very ripe bananas)
4 Tbsp Brown Sugar
1/2 Tsp Cinnamon
1 Tsp Vanilla extract
1/4 Tsp Salt
1 1/8 cup all-purpose Flour
Vegetable Cooking Oil

TOPPING
4 Tbsp Brown Sugar
4 Tbsp White Sugar
1 Tsp Cinnamon

DIRECTIONS

  1. Mix the mashed bananas with the sugar and spices to combine well.
  2. Stir flour into banana mixture slowly to avoid lumps of flour.
  3. Once all the ingredients are mixed the batter should look like a thick chunky pancake batter.
  4. Add enough cooking oil to cover the bottom of a frying pan.
  5. Once the oil is at Medium to High Heat add scoops of the batter to the pan and fry several fritters at a time until browned and lightly crisped on both sides. Don't crowd the pan.
  6. Once cooked place the fritters on some paper towels to drain any excess oil.
  7. Combine the topping ingredients to make the cinnamon sugar.
  8. Top your fritters with the Cinnamon Sugar and serve warm.

GARLIC MASHED POTATOES

INGREDIENTS

  • 3 1/2 pounds potatoes
  • 2 tablespoons kosher salt
  • 1 Tsp Black Pepper
  • 1 cup Heavy Cream
  • 1 cup Whole Milk
  • 6 cloves garlic, crushed 
  • 6 ounces grated Parmesan
  • 2 Tbsp Butter
Feeling decadent? Add a bit of
Flavored Butter or Oil 
to your mashed potatoes.

CHERYL'S GARLIC MASHED POTATOES

INGREDIENTS

  1. Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan, add the salt, and cover with water.
  2. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil.
  3. Cook until potatoes fall apart when poked with a fork.
  4. Heat the milk and cream and the garlic in a medium saucepan over medium heat until simmering.
  5. Remove from heat and set aside.
  6. Remove the potatoes from the heat and drain off the water.
  7. Mash the potatoes and add the garlic & cream mixture, butter and Parmesan; stir to combine.
  8. Let stand for 5 minutes to thicken and serve.


CHERYL'S STEWED PORK CHOPS

CHERYL'S STEWED PORK CHOPS, MASHED POTATOES, BUTTERED CORN & PICKLED CUCUMBERS

INGREDIENTS

  • 1/2 Tsp Kosher Salt
  • 1 Tsp Ground Black Pepper
  • 1/2 Tsp Celery Salt
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Season-All
  • 6 Pork Chops
  • 1 large onion, Sliced into strips
  • 2 Large Cloves of Garlic, Peeled and Chopped
  • 1 Can Whole Tomatoes
  • 1 Large Red Bell Pepper, Seeded & Sliced into strips
  • 1 Large Green Bell Pepper, Seeded & Sliced into strips
  • 6 Tbsp Ketjap Manis
  • 6 Tbsp Ketchup
  • 1 Tbsp Sambal Oelek

DIRECTIONS

  1. Add the first 5 Ingredients together, this will form a spice rub for the Pork Chops.
  2. Make sure your meat is at room temperature, and pat dry with paper towels.
  3. Season the Pork Chops lightly, but completely and set aside.
  4. Put the Oil into a medium to large Frying or Saute Pan or Wok and bring to a medium heat. Add the Pork Chops and fry until browned on the outside but not fully cooked on the inside.
  5. Remove the pork Chops from the pan and set aside.
  6. Once the pan has cooled down a little, add the onions and the garlic and cook until the onions start to soften up.
  7. Add the contents of the can of Tomatoes, the peppers, Sambal, Ketchup and Ketjap to the pan, mix everything together and continue to cook for a few minute.
  8. Add the pork chops back into the pan, including any juices that drained into their holding dish.
  9. Continue to cook on low heat until the pork chops are cooked through and tender.

Cheryl prefers it with celery, and without vodka, but both ways are delicious. The step of rimming the glass is completely optional. Add any garnish you like.

Cheryl's Favorite Bloody Mary

  • 4 ounces tomato juice
  • Dash celery salt
  • Dash freshly ground cracked pepper
  • 8 good shakes Worcestershire sauce
  • 1/8 teaspoon horseradish
  • 6 good dashes Tabasco or Sriracha
  • 1 1/2 to 2 ounces of your favorite vodka
  • 1 large lime or lemon
  • Celery Stalk for Garnishing
  1. Cut the lime or lemon into wedges, take a glass and run the wedge around the rim to dampen.
  2. Dip top of the rim into coarse salt and pepper to completely cover the rim.
  3. Add first 6 ingredients together in another glass, squeeze the lime juice of three of the wedges into that glass and mix together.
  4. At this point you can decide to add or to omit the vodka.
  5. Mix well and taste, adjust seasonings to your taste.
  6. Carefully add ice  to the glass if you like your Bloody Mary on the rocks.
  7. Pour the mixed bloody Mary into your rimmed glass.
  8. Add the celery stalk, a Dash of cracked Black Pepper, the last lime wedge and enjoy.
