VEGETABLE: CASSAVA

CASSAVA FRENCH FRIES

  • 2 lbs Cassava
  • 3 cups oil for frying
  • Salt to taste

WHAT ARE CASSAVA?
  • Peel and cut the cassava into 3-4 inch long strips, and bring to a boil in salted water.
  • Once soft, drain and remove any dark parts.
  • Heat the oil until it just barely starts to smoke and fry the cassava until they turn a golden brown.
  •  Put the fries on paper towels (or newspaper) to drain the excess oil.
  • Add salt to taste and serve hot.
