CASSAVA FRENCH FRIES
2 lbs Cassava
3 cups oil for frying
Salt to taste
WHAT ARE CASSAVA?
Peel and cut the cassava into 3-4 inch long strips, and bring to a boil in salted water.
Once soft, drain and remove any dark parts.
Heat the oil until it just barely starts to smoke and fry the cassava until they turn a golden brown.
Put the fries on paper towels (or newspaper) to drain the excess oil.
Add salt to taste and serve hot.
