FRITTER: ACCRAS

SALT FISH ACCRA

Accras are fritters. Often they are made with salt fish, shrimp or some type of pea or bean. Most of the Caribbean countries have some type of Accra, though the name may vary from one place to another.

SALT FISH ACCRAS

INGREDIENTS

  • 8 oz de-salted salt fish, flaked finely
  • 2 cups all purpose flour
  • 2 TSP baking powder
  • 2 TBS finely chopped fresh herbs (thyme, green onions, culantro, cilantro)
  • 1/4 cup finely minced Shallots
  • Minced Scotch Bonnet to taste
  • 1/2 cup water (more or less depending on consistency)
  • Salt to taste
  • Oil for deep frying

DEEP FRYING

DIRECTIONS

  1. Mix flour and baking powder together in a large bowl.
  2. Mix together salt fish, herbs, shallots and pepper; add to flour and mix.
  3. Add water to make a batter of dropping consistency. It should not be watery.
  4. Heat oil in pan until hot. Test for temperature and taste by dropping 1 tablespoon of batter into the oil. 
  5. Adjust salt and heat if necessary and then proceed with frying making the accras.
  6. Fry until brown, about 3 - 4 minutes. Drain on paper towels.
